Premium Alberta Black Angus Beef is sold by hanging weight, which is the weight of the carcass after harvest once the hide, head, internal organs, and lower legs have been removed. This is the standard way farmers and processors price beef shares such as quarter, half, and whole beef.
Your final packaged take-home beef will weigh less than the hanging weight because the carcass is aged, trimmed, deboned where required, and cut into freezer-ready packages. Moisture loss during aging and trimming excess fat also reduce the final weight.
What this means for you is that you are purchasing more than just pounds of meat—you are securing a full custom beef experience that includes professional cutting and wrapping, premium steaks, roasts, ground beef, stew meat, and the ability to stock your freezer with locally raised beef you can trust.
As a general guide, customers can expect their packaged beef to be approximately 60–70% of the hanging weight, depending on cut preferences and trim options.
